Ingredients
- 8 oz delicata squash
- 5 oz Cremini mushrooms
- 1 tsp fresh garlic minced
- 1 1/2 tsp fresh thyme minced
- 1/8 tsp kosher salt
- 1/8 tsp ground black pepper
- 2 tsp canola oil

Instructions
- Preheat oven to 350°F. Wash delicata squash, cut in half lengthwise, scoop out seeds and discard. Slice 1/2" thick and place in a bowl. Remove stems from mushrooms (slice in half if large) and place caps in a different bowl. Divide into each bowl olive oil, garlic, salt and pepper. Place the squash on pan and the mushrooms on another pan. Roast in the oven until tender, about 10-15 minutes. When cooked through, combine vegetables and toss with fresh thyme leaves.
