A light and refreshing spinach salad with nuts, fruit and a citrus dressing

Ingredients
- 1 each Anjou pear
- 1/4 cup 100% orange juice
- 1/4 cup rice wine vinegar
- 2 tsp fresh ginger grated
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 2 tsp sesame oil
- 5 ounce baby spinach
- 1 each Anjou pear
- 1 cup walnuts

Instructions
- Puree pear, juice, vinegar, ginger, salt and pepper in a small blender until smooth. Add oil and blend again.
- Thinly slice pears, ensuring seeds are removed.
- Place 1-1/4 cup spinach, 1/4 each pear and 1⁄4 cup walnuts in a large bowl. Drizzle with 2 Tbsp. dressing and toss lightly to coat. Serve immediately.
