A flavorful one pan meal made with fennel, orange and wild salmon

Ingredients
- 2 oz fresh fennel sliced thin
- 1 oz red onion sliced thin
- 1 tsp fresh garlic minced
- 1 oz pitted green olives chopped
- 2 tsp grated orange peel
- 1/3 cup 100% orange juice
- 1/8 tsp kosher salt
- 1/8 tsp ground black pepper
- 1 lb wild salmon
- 4 tsp canola oil

Instructions
- Finely shave fennel and red onions. Mix together with garlic, green olives, orange zest, orange juice, oil, salt and freshly ground black pepper.
- Spread 1/3 of the vegetables on the bottom of a pan, place fish in single layer, and top remainder of vegetables on top of fish. Cover tightly and oven steam in a preheated 400°F oven for about 7 minutes until cooked through.
