Ethiopian Cabbage, Carrots and Potatoes

Ingredients

  • 7 oz. potatoes peeled and diced
  • 1 Tbsp canola oil
  • 5 oz carrots diced diagonally
  • 3 oz yellow onions sliced
  • 2 tsp fresh ginger minced
  • 3/4 tsp fresh garlic peeled and minced
  • 1/2 tsp ground cumin
  • 1/4 tsp turmeric
  • 7 oz green cabbage sliced
  • 1/8 tsp ground black pepper

Instructions

  • Steam potatoes until they begin to soften, about 10 minutes.
  • Meanwhile, heat oil in a sauté pan. Sauté carrots and onions until they begin to soften, about 5 minutes.
    Stir in ginger, garlic, cumin and turmeric. Cook until fragrant, about 1 minute.
    Stir in cabbage, salt, pepper and par-cooked potatoes. Cook until cabbage and potatoes are tender, about 5 more minutes.
