Roasted pumpkin and Brussels Sprouts seasoned with balsamic vinegar, garlic and thyme

Ingredients
- 2 cup fresh pumpkin
- 2 cup Brussels sprouts
- 2 Tbsp canola oil
- 2 Tbsp balsamic vinegar
- 1 Tbsp fresh garlic minced
- 1 Tbsp fresh thyme chopped
- 1/4 tsp kosher salt
- 1/8 tsp ground black pepper

Instructions
- Preheat oven to 350°F. Halve Brussels sprouts. Toss pumpkin cubes and Brussels sprouts with oil, balsamic, garlic, thyme, salt and pepper. Spread in a single layer on a sheet pan. Roast in the oven for 30 minutes.
